Tamarindo Atole

To prepare the rich recipe for Atole de Tamarindo you need the following ingredients:

  • 100 grams of tamarind without the shells
  • 1 1/4 cup warm water to soak
  • Piloncillo, to taste
  • 4 3/4 cups of water
  • 250 grams of dough

PREPARATION

Soak the peeled tamarind pods in a container with 1 1/4 cup of water for 30 minutes. After that time, press the tamarind pods between your fingers, rub them to remove all the pulp and form a liquid paste.

Pour 4 cups of water into a medium saucepan and add the brown sugar. Add the tamarind paste with a strainer to remove the seeds. Place the saucepan over medium heat and bring to a boil.

Meanwhile, mix the dough with the remaining water until there are no lumps.

When the tamarind mixture in the saucepan begins to boil, gently add the flour dough mixture and stir. When the atole reaches a boiling point, reduce the heat and simmer for about 8 minutes, stirring frequently.

Serve hot.

Notes: Use the flour dough they sell to make tortillas.
